Eileen Schweiss. I think the name is some kind of legend around Herculaneum - and beyond. She's a 4 time all state champ cross country runner through the Kastens Elite Running Program at Herky High School. Eileen received a running scholarship thru SIU, and she also received Bright Flight. The day I went to school to watch the awards ceremony, they finally just had Eileen stand on stage while they read off all the scholarships she was receiving....I think it took nothing short of 30 minutes or so!! Congratulations Eileen! You have made your school and community proud--Good Luck as a Saluki Dog!
I have to be completely honest. When I met with Laura Campbell to discuss her daughter's graduation cake I was a little worried how it would turn out! She brought her notes and proceeded to tell me that Layne loves Tigger, volleyball, chocolate chip cookies (nickname Cookie Monster). Also, that she was homecoming queen and wore a coral dress, her prom dress was yellow, she spent an entire volleyball season on crutches, she's a Christian, her number is 17, and remember, she plays for herky so school colors are red and black, Laynes fave color is Lime Green. All I could see in my head was black, red, lime, orange---and how was I going to incorporate all of this to coordinate?? Well, I have to say this was a VERY fun cake to work on. I think I even joked I was going to rename the company "scrapbook cakes" because I really felt like I was scrapbooking someone a cake!! I was really happy with the volleyball net and crutches, too. Fun cake, and the Campbell's are just genuinely sweet people!!
